I would like to customize the template so that it can be optimized for search engines. I would like to add some text, and proper meta tags. Can you please tell me how to go about this.
All this can be achieved in step step 16) E-commerce Store Settings and step 17) E-Commerce store Categories.

In step 16 Scroll to bottom of the page and click on the header called CUSTOMIZE E-COMMERCE CONTENT (click here). In the subsequent menu, you can customize particular pages and add new ones.

Also, in step 17, as you are adding in your categories, the DESCRIPTION field can be filled out with HTML and text which can help with SEO because they will show up on the top of the category page.
